Eachmonth, the Livingston County Health Department inspects businesses and schools that serve food, ensuring the public is protected from harmful practices or lack of healthful practices.

The Livingston Daily publishesreports on priority violations, the most serious of the violations—ones that could “directly lead to contamination of food or increase the risk of transmitting a foodborne illness,” as well as corrective measures taken. Also listed are restaurants or schools in which no violations of any kind were found during the routine inspection. Follow-up inspectionsare also provided if priority violation correctionswere unresolved at the end of the previous month.

Of the dining establishments inspected in April2018, priority violations were found at 21locations, with fivehaving multiple priority violations.

Two priority violations were found at each of the following locations:

Captain Joe’s Grill, 9901 N. Main St., Whitmore Lake

The dish machine was not sanitizing at the proper concentration. Maintenance had just been performed on it. The amount of sanitizer in the container was low, so it was replaced and primed. It still took several tries to get the proper amount of chlorine residual on the test strip. Although it was corrected on-site, it will be rechecked at the follow-up inspection. The salad cooler was holding at 40 degrees at around 11:15 a.m. but coleslaw, tomatoesand dressings made in house were holding at 45 to 46 degrees at 1:30 pm. Items were moved to another cooler until it is repaired and holding at 41 or below. Sausage on the counter top line cooler was holding at 48 degrees. It was there for almost four hours, so it was discarded. The item will be stored in a covered, deep metal container. Follow-up in 10 days.

Hartland Glen Golf Course, 12400 Highland Road, Hartland

The drain line for the ice bin at the bar does not have an air gap. Create an air gap of at least 1 inch above the drain.The dish machine is not sanitizing at the proper concentration. Manually sanitize until it is repaired.

Holiday Inn Express, 8285 Movie Drive, Brighton

Apples for self service need to have a utensil, i.e. tongs, which were provided. This is the second time this has been cited. Butter and cream cheese packets were stored in containers on bags of ice and water, but it was only on the bottom so the packets on the top were 56 degrees for the butter that had been out the longest. It was discarded. The cream cheese had only been out for an hour and was 48 degrees, so it was re-refrigerated. This is the second time this violation has been cited. They changed from ice packs to plastic bags, but it is still not keeping the products cold enough. Obtain a refrigerated unit or alternate device designed for cold holding.

New China House, 106 W Main Street, Pinckney

The sanitizer concentration at 3-comp was below 25 ppm. The water was drained, and new sanitizer solution was prepared. The concentration was verified with test strip and at concentration per manufacturer recommendation. There were some ready-to-eat foods stored in colanders in the walk-in cooler draining onto egg cartons. The cartons were discarded at time of inspection. Do not reuse egg cartons that are single use, not washableand could be contaminated.

Tyrone Hills of Michigan, 8449 US 23, Fenton

The dish machine was not dispensing the proper amount of sanitizer because the container was empty. The container was refilled, and the violation was corrected during the inspection. This violation was repeated for the second time. In the walk-in cooler, walk-in freezerand dry storage, several foods were past the manufacturer's expiration date. These included cheese, olivesand miscellaneous condiments. Some had 2017 expiration dates. In the walk-in freezer several meat products appeared to be adulterated by freezer burn. This violation was repeated for the second time. The items were discarded and all food storage areas were to be inspected with expired products discarded.

One priority violation was found at each of the following locations:

Arby’s of Hartland, 10099 Highland Road, Hartland

An employee wiped gloved hands on soiled apron and then proceeded to prepare ready-to-eat food without changing gloves. It was explained to the employee why that action potentially contaminates the single-use gloves. Avoid touching body/uniform, but replace gloves if this or any other potential contamination occurs.

Cornerstone School, 9455 Hilton Road, Brighton

The mop sink faucet contained a Y-valve attached. Y-valve installations are not permitted because they interfere with the built-in atmospheric vacuum breaker. A proper sidekick valve was installed. Violation corrected.

Dairy Queen, 112 E. Grand River, Howell

The drain hoses for the new soft serve machines did not have air gaps at the floor drain. The proper air gap was installed, and the violation corrected.

Dragon Court, 7570 E. M-36, Hamburg

The cooler on the left was holding sliced tomatoes, a crab Rangoon cheese mixture and a few other items at 45 degrees. The items had been there for an hour so the tomatoes were put in an ice bath in the cooler, and the crab cheese was put into another cooler. Do not store time/temperature control for safety (TCS) items there until it is repaired and holding food at 41 degrees or below. Re-hydrated cooked black beans were on the wok line cart at 67 degrees. They are made daily. They were discarded. Refrigerate or hot hold.

Gus’s Carryout, 8694 W. Grand River, Brighton

The sanitizer solution in the 3-compartment sink was too weak. The sink was being filled with the automatic sanitizer dispenser and regular tap water at the same time. This procedure was improperly diluting the sanitizer. The proper procedure was explained, and the violation was corrected during the inspection.

Hartland High School, 10635 Dunham Road, Hartland

Water treatment filter located near the main cook line. The drain hose from the water treatment system did not have the required air gap at the floor drain. A plastic zip-tie was provided and the drain hose was properly secured. Violation corrected.

Holiday Inn Express, 6910 Whitmore Lake Road, Brighton

The front serving area contains whole apples on display for customer self-service. Fruits with edible peels must be protected from hand contamination. Provide tongs or individually wrap fruits with edible peels. Tongs were provided, and the violation was corrected during the inspection. This violation has been repeated for the second time.

Homewood Suites by Hilton, 8060 Challis Road, Brighton

Sliced melon was in a container that had been frozen for cold holding, but it was holding at 60 degrees. It was missing the bottom container that may help hold the coldness in (because the yogurt was in the same type of container with bottom portion attached and was holding at 45). Both items are always discarded after the 3-hour breakfast period. The cream cheese and butter packets were not in frozen/refrigerated containers, because the containers had not been placed in the freezer the night before. The person in charge put out fewer packets and was planning on discarding them after breakfast. More frozen containers will be purchased in order to have extra. Milk was holding at 55 degrees in new stainless steel milk pitchers that had been purchased since this was cited last time, but these pitchers also don't seem to be able to keep the milk at 41 degrees. The half & half was at 45 degrees at the end of the breakfast period, so similar pitchers may be purchased for the milk. All milk is discarded after breakfast. The general manager will make these changes and ensure that temperatures are monitored.

Jets Pizza, 8705 W. Grand River, Brighton

A large plastic tub of shredded cheese was placed into the top rail of the pizza cooler. The tub was too large to fit in the unit, so it was propped up above the cooler rail and exposed to warm air. The cheese was measured at 48 degrees and was discarded. Proper storage pans were to be purchased within five days, with cheese stored in a lower unit as a temporary correction. This violation was repeated for the third time during the last five inspections.

Leo’s Coney Island, 4380 E. Grand River, Howell

Raw shelled eggs were cracked open on the prep cooler surface, which was located near ready-to-eats foods (toast, lettuce). This practice has the potential to cross-contaminate the RTE foods. Always handle raw animal products away from RTE foods and prep surfaces. The proper procedure was explained and surfaces were cleaned/sanitized. Violation was corrected. This violation was repeated for the second time.

MJR Group/Brighton Cinema, 8200 Murphy Drive, Brighton

The iodine dish machine at the bar was not registering sanitizer. It is rarely used. It did not look like there was any sanitizer being pulled in from the container. Repair.

Pi’s Asian Cuisine, 8262 Cross St., Brighton

Cooked beef and chicken is prepared in a batch for the busy lunch rush. The food is then held at room temperature, which is usually consumed within two hours or placed into the walk-in cooler. This procedure is not permitted because the food does not maintain consistent hot holding temperatures as required. The food was holding at 76 degrees. The product was discarded and new hot holding procedures will be followed. Violation corrected during the inspection. This violation was repeated for the second time during the last five inspections.

Pinckney Pub & Grill, 10292 Dexter Pinckney Road

The cook said that Ecolab changed out the sanitizer because it had become ineffective, but the machine still is not sanitizing. The manager was called, and she said that a part is needed. Dishes were to be sanitized by hand until the machine was repaired. At a follow-up inspection, the machine was found to be sanitizing at the proper levels.

Red Olive Restaurant, 10594 Highland Road, Hartland

The following glove use violations were observed: 1) Employee did not change gloves after handling raw shelled eggs for omelets. The employee then attempted to touch ready-to-eat foods with the same pair of gloves. 2) Employee attempted to wash gloves and re-use. Gloves must be discarded after each task between raw and ready-to-eat foods. Never attempt to wash or reuse gloves. The proper procedure was explained and the violation was corrected during the inspection.

Stillwater Grill, 503 W Grand River, Brighton

Time as a public health control is used for the buerre blanc sauce and the butter. Direction was given to create a written policy describing how times would be labeled, with the policy to be sent to the health department.

Tim Horton’s, 300 W. Grand River, Brighton

Shake wands and cutting boards are sanitized frequently throughout the day using sanitizer cloths, then washed/rinsed/sanitized nightly in the 3-compartment sink. These items must be washed/rinsed/sanitized every four hours. Sanitizer cloths may be used in between the four-hour cleaning interval. The proper procedure was explained, and the violation was corrected during the inspection.

A photo was emailed of the proper air gap for the ice machine drain line.

Discover the Fuel Brighton East, LLC, 9689 Village Place Blvd, Brighton

The drain pipes were adjusted and now contain the proper air gap. Violation corrected.

Mugg & Bopps Subway, 106 Main Street, Gregory

No expired/dishonestly presented food items were identified at time of inspection. This violation remains corrected. PIC indicated they are now going through refrigeration units daily and checking dates and rotating products. They now have a bin the back cooler for expired items.

New Asia, 10030 Highland Rd, Hartland

The meat slicer and can opener were just used this morning for prep, and the person-in-charge was starting to clean the items. He indicated he is putting the can opener through the dish machine regularly and cleaning the slicer. Food grade lubricant was available.

The Pound, 139 W Main St, Brighton

Proper cleaning/sanitizing was observed and discussed. Violation corrected.

Wooly Bullys, 1500 Pinckney Road, Howell

Proper cleaning frequency was discussed. Violation corrected. A shield has been installed between the breading station and lettuce, which now provides adequate protection. Violation corrected. A violation with storage of ready-to-eat foods remains corrected.
